1.5 gal water - bring to boil
Stir in 18.5 pounds Purple Hive Honeytm honey + 1 tablespoon citric acid
carboy sterilization
3 tablespoons clorox
fill to top with water
cover with plastic wrap
let sit at least 30 minutes
rinse 6 times (3 per side)
Sterilize carboy
At start of boil remove from heat
Add 1 teaspoon Irish Moss
Cool 1 hour in ice bath
Add 1 gal spring water to 6 gal carboy
Add 3.5 gal must to carboy
Add 2 teaspoons yeast nutrient
Add 1 gal spring water
Add 0.5 gal distilled water
Add 1 package yeast 'Red Star Pasteur Champagne'
Swirl (with hips)
Add air lock

Notes:
Went shopping at Dad's for Mead Day - yeast, yeast nutrient, extra air lock.
First batch using only honey from our bees.
Sterilized carboy while must was heating. Sink was going to be in use for ice bath.
Cooled must in sink instead of using a larger pot. 1 hour is too long. Must was room temperature.
Next time skim the protein off first, then add the moss.
Next time get 3 gal of spring water.
Still did not clear. Added 1 tsp moss in 3/4 c water. Boiled 10 minutes and added to must on 12-29-2007.
